green rice

My friend Ramona Searcy shared this fabulous recipe with me over 30 years ago. It has been a family favorite every since. (It is so popular that my sister expects me to drop everything I'm doing to recite it to her every year. I'm posting it here for Teri.)

Ingredients For green rice

  • 4
    eggs
  • 1/2 c
    butter, melted
  • 1 c
    milk
  • 1 pkg
    cooked broccoli
  • 2 c
    cooked rice
  • 1 lb
    velveeta, cubed
  • 1
    small onion, diced

How To Make green rice

  • 1
    Put eggs, butter, milk, and broccoli in a blender and puree.
  • 2
    Pour mixture over cooked rice, onions, and cheese and stir together. (Yes, this will look very green!)
  • 3
    Pour the combined mixture into a greased casserole dish and bake for 1 hour at 350 degrees.
