Gerda's Quick and Easy Broccoli Casserole

An easy to make, healthy, delicious side dish. One of my friends tried it with frozen spinach and loved it, so either broccoli or spinach will bring you a fabulous vegetable dish minus the cheese, but if you must have cheese add about 1/2 cup Cheddar cheese on the top of the casserole before baking.

  • 2 pkg
    (10 ounce) frozen chopped broccoli, defrosted
  • 1/2
    small onion, chopped
  • 1 can(s)
    (10 ounce) cream of mushroom soup
  • 1/2 c
    mayonnaise
  • 1 c
    crushed ritz crackers (optional)

How to Make Gerda's Quick and Easy Broccoli Casserole

Step-by-Step

  1. Mix all ingredients except crushed Ritz crackers and put into a greased 2 quart casserole.
    Top with 1 cup of crushed Ritz crackers.
  2. Bake at 350 degrees for 30-40 minutes.
