family favorite corn casserole
In the South, there are hundreds of wonderful corn casserole recipes, and I've tried them all - mostly. But this is the one I always come back to, because it's super easy, super fast, and - best of all - most demanded by family.

Ingredients
- 1 stick margarine
- 1 large onion, chopped
- 1/2 cup chopped bell pepper
- 2 - eggs
- 1 teaspoon salt and pepper - or to taste
- 1 can whole kernel corn - drained
- 2 cans cream-style corn
- 1 cup instant rice - uncooked
- 1 teaspoon sugar
- 1/2 cup shredded cheddar
How To Make family favorite corn casserole

Step 1Melt margarine in large skillet over med. heat and saute onions and bell pepper until soft. Remove from heat. (If you like, you can use butter instead of margarine, but I find it makes no difference to the taste.)

Step 2Stir in all remaining ingredients, blending thoroughly.

Step 3Pour into 9x13 baking dish or large casserole dish. Sprinkle with paprika at this point, if desired. I don't.

Step 4Bake in preheated 350 degree oven for 30 minutes.
