In the South, there are hundreds of wonderful corn casserole recipes, and I've tried them all - mostly. But this is the one I always come back to, because it's super easy, super fast, and - best of all - most demanded by family.

  • 1 stick
  • 1 large
    onion, chopped
  • 1/2 c
    chopped bell pepper
  • 2
  • 1 tsp
    salt and pepper - or to taste
  • 1 can(s)
    whole kernel corn - drained
  • 2 can(s)
    cream-style corn
  • 1 c
    instant rice - uncooked
  • 1 tsp
  • 1/2 c
    shredded cheddar

How to Make Family Favorite Corn Casserole


  1. Melt margarine in large skillet over med. heat and saute onions and bell pepper until soft. Remove from heat. (If you like, you can use butter instead of margarine, but I find it makes no difference to the taste.)
  2. Stir in all remaining ingredients, blending thoroughly.
  3. Pour into 9x13 baking dish or large casserole dish. Sprinkle with paprika at this point, if desired. I don't.
  4. Bake in preheated 350 degree oven for 30 minutes.
