1 largeonion, chopped
1/2 cchopped bell pepper
1 tspsalt and pepper - or to taste
1 can(s)whole kernel corn - drained
2 can(s)cream-style corn
1 cinstant rice - uncooked
1/2 cshredded cheddar
How to Make Family Favorite Corn Casserole
- Melt margarine in large skillet over med. heat and saute onions and bell pepper until soft. Remove from heat. (If you like, you can use butter instead of margarine, but I find it makes no difference to the taste.)
- Stir in all remaining ingredients, blending thoroughly.
- Pour into 9x13 baking dish or large casserole dish. Sprinkle with paprika at this point, if desired. I don't.
- Bake in preheated 350 degree oven for 30 minutes.
