In the South, there are hundreds of wonderful corn casserole recipes, and I've tried them all - mostly. But this is the one I always come back to, because it's super easy, super fast, and - best of all - most demanded by family.

Ingredients

  • 1 stick margarine
  • 1 large onion, chopped
  • 1/2 cup chopped bell pepper
  • 2 - eggs
  • 1 teaspoon salt and pepper - or to taste
  • 1 can whole kernel corn - drained
  • 2 cans cream-style corn
  • 1 cup instant rice - uncooked
  • 1 teaspoon sugar
  • 1/2 cup shredded cheddar

How To Make family favorite corn casserole

  • Step 1
    Melt margarine in large skillet over med. heat and saute onions and bell pepper until soft. Remove from heat. (If you like, you can use butter instead of margarine, but I find it makes no difference to the taste.)
  • Step 2
    Stir in all remaining ingredients, blending thoroughly.
  • Step 3
    Pour into 9x13 baking dish or large casserole dish. Sprinkle with paprika at this point, if desired. I don't.
  • Step 4
    Bake in preheated 350 degree oven for 30 minutes.
