crustless spinach quiche
This is delicious! and a staple in my home. Because it is crustless it is low in carbs. It is very easy to make and everyone just loves it!!! You can substitute broccoli for the spinach but my family prefers the spinach.

Ingredients
- 5 - eggs
- 12 ounces monterey jack cheese, shredded
- 1 cup onion, chopped
- 10 ounces box frozen spinach, thawed
- 1 tablespoon olive oil

How To Make crustless spinach quiche

Step 1Preheat oven to 350

Step 2Heat oil in fry pan & add onion. Squeeze excess liquid from spinach and add to pan. Cook for approx. 10 minutes on medium and remove from heat to cool.

Step 3In large bowl whisk the eggs. Stir in the cheese and then the cooled spinach/onion mixture. Add salt & pepper to taste.

Step 4Spray a 9" pie pan with Pam. Add the mixture to the pan, even it out, and bake for 40 minutes.
