stephanie's dirty rice
This is one of the few things I make vegetarian.LOL! I usually serve this with meat so I don't add meat to this dish.If you want,add 1 lb ground beef or ground pork.It's really good without meat though.If use brown rice,follow directions on package. This is a good dish to use up leftover cooked rice,white or brown rice.

- - 2 t vegetable oil
- - 1 c minced mushrooms
- - 1/2 c each onions,celery and green bell peppers
- SEASONINGS
- - 1 bay leaf
- - 1/2 t. cayenne
- - 1/2 t. salt
- - 1/2 t. dried thyme
- - 1/2 t. dried oregano
- - 3 t. minced fresh garlic
- - 1 c vegetable broth
- COOKED RICE
- 1 T. BUTTER
- - 1 c rice
- - 2 c vegetable broth

Step 1In a skillet heat oil,saute vegetables until tender,add seasonings.Add 1 c vegetable broth and simmer until vegetables are tender,turn heat to high and cook until no liquid remains. By large spoonfuls,add cooked rice to vegetable mixture stirring well to incorporate.Continue stirring until rice s heated thru. Cooked rice Heat 1 t.butter in a small pot,add onion and rice,saute until rice slightly changes color,add 2 c broth,bring to a boil. Stir,cover,turn to lowest heat and steam for 20 minutes.Remove from heat without uncovering.
