rice balls with marinara
Got this recipe off the internet. It is Chef Antonio MuFasso's recipe I just added the garlic.

Ingredients
- 1 cup arborio rice
- 2 cups water
- 4 cloves garlic minced
- 1 tablespoon salt
- 2 large egg yolks
- 2 cups grated parmesan cheese
- 1/4 cup fresh basil minced
- 1/4 cup fresh parsley minced
- 3 tablespoons chopped sun dried tomatoes
- 1 cup italian bread crumbs
- 16 - 1/2 inch by 1/2 inch cubes of mozzarella cheese
- - oil for frying
How To Make rice balls with marinara

Step 1Place water, rice, salt, and garlic in pan on stove and bring to a boil. Reduce to a simmer and simmer for about 12 minutes until all water is absorbed. Spread rice out on baking sheet to cool a bit.

Step 2In a large bowl combine egg yolks, and parmesan cheese. Add the rice, parsley, basil, and sun dried tomatoes.

Step 3Place bread crumbs in a shallow dish. Roll the rice mixture into 2 inch balls. Take a piece of mozzarella cheese and push into center of rice enclosing the cheese inside.

Step 4Roll the balls in bread crumbs and set aside until all are done.

Step 5Deep fry in batches at 350 degrees for about 3 minutes. Serve with marinara
