Rice Balls with Marinara

Got this recipe off the internet. It is Chef Antonio MuFasso's recipe I just added the garlic.

Deep Fry


  • 1 c
    arborio rice
  • 2 c
  • 4 clove
    garlic minced
  • 1 Tbsp
  • 2 large
    egg yolks
  • 2 c
    grated parmesan cheese
  • 1/4 c
    fresh basil minced
  • 1/4 c
    fresh parsley minced
  • 3 Tbsp
    chopped sun dried tomatoes
  • 1 c
    italian bread crumbs
  • 16
    1/2 inch by 1/2 inch cubes of mozzarella cheese
  • ·
    oil for frying

How to Make Rice Balls with Marinara


  1. Place water, rice, salt, and garlic in pan on stove and bring to a boil. Reduce to a simmer and simmer for about 12 minutes until all water is absorbed. Spread rice out on baking sheet to cool a bit.
  2. In a large bowl combine egg yolks, and parmesan cheese. Add the rice, parsley, basil, and sun dried tomatoes.
  3. Place bread crumbs in a shallow dish. Roll the rice mixture into 2 inch balls. Take a piece of mozzarella cheese and push into center of rice enclosing the cheese inside.
  4. Roll the balls in bread crumbs and set aside until all are done.
  5. Deep fry in batches at 350 degrees for about 3 minutes. Serve with marinara
