Love this recipe. You can use either red kidney beans or pigeon peas. Parboil rice makes it easier to cook.

Ingredients
- 3 cups 3 cups of rice(i like parboil)
- 1 can 1 can either kidney beans or pigeon peas
- 5 cloves 5 cloves of garlic (finely chopped)
- 1 - 1 uncut scotch bonnet pepper
- 3 sprigs 3 scallions(cut off ends near root)
- 1 can 1 can of coconut milk
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 2 sprigs fresh thyme
How To Make red beans and rice

Step 1Add beans or peas to the pot along with garlic

Step 2Add your coconut milk, rice, salt, black pepper and thyme to the mix

Step 3Crush the scallion (do not chop) and add this and the uncut scotch bonnet pepper,the pepper remains uncut so as to not make the rice spicy, just give it a subtle peppery flavor.

Step 4Rice and Peas should be ready after about 40 minutes (exact cooking time will depend on the brand of rice used).
