Red Beans and Rice
3 c3 cups of rice(i like parboil)
1 can(s)1 can either kidney beans or pigeon peas
5 clove5 cloves of garlic (finely chopped)
11 uncut scotch bonnet pepper
3 sprig(s)3 scallions(cut off ends near root)
1 can(s)1 can of coconut milk
1 1/2 tspsalt
1 tspblack pepper
2 sprig(s)fresh thyme
How to Make Red Beans and Rice
- Add beans or peas to the pot along with garlic
- Add your coconut milk, rice, salt, black pepper and thyme to the mix
- Crush the scallion (do not chop) and add this and the uncut scotch bonnet pepper,the pepper remains uncut so as to not make the rice spicy, just give it a subtle peppery flavor.
- Rice and Peas should be ready after about 40 minutes (exact cooking time will depend on the brand of rice used).
