parmesan rice
This is not my recipe but it is WAAAAAAY too good not to share. Recipe calls for a dish of boiled water...make sure it's 1/4 to 1/2 full. If you like your rice just a tad bit on the crunchy side (like me!!) fill dish about 1/4 full. Enjoy!!!!

Ingredients
- 2 cups cooked white rice
- 1 cup chopped fresh parsley
- 1/4 cup diced onions
- 1 cup grated parmesan cheese
- 2 - eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 ounces sliced or shredded mozzarella cheese
- - tomato slices(enough to cover baking dish)
How To Make parmesan rice

Step 1Preheat oven 350 degrees. Pour boiled water into a baking dish, set aside. In a bowl, mix rice, parsley, onions, and Parmesan cheese.

Step 2In a separate bowl, thoroughly beat eggs & milk together. Blend into rice mixture. Add salt & pepper.

Step 3Pour mixture into a well buttered 1- 1 1/2 quart baking dish (not dish with boiled water).

Step 4Place half of the mozzarella cheese over rice. Top with tomato slices. Then layer rest of mozzarella on top. Cover tightly

Step 5Place dish in other baking dish with boiled water. Bake for 30- 35 minutes.
