parmesan rice

This is not my recipe but it is WAAAAAAY too good not to share. Recipe calls for a dish of boiled water...make sure it's 1/4 to 1/2 full. If you like your rice just a tad bit on the crunchy side (like me!!) fill dish about 1/4 full. Enjoy!!!!

Ingredients

  • 2 cups cooked white rice
  • 1 cup chopped fresh parsley
  • 1/4 cup diced onions
  • 1 cup grated parmesan cheese
  • 2 - eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces sliced or shredded mozzarella cheese
  • - tomato slices(enough to cover baking dish)

How To Make parmesan rice

  • Step 1
    Preheat oven 350 degrees. Pour boiled water into a baking dish, set aside. In a bowl, mix rice, parsley, onions, and Parmesan cheese.
  • Step 2
    In a separate bowl, thoroughly beat eggs & milk together. Blend into rice mixture. Add salt & pepper.
  • Step 3
    Pour mixture into a well buttered 1- 1 1/2 quart baking dish (not dish with boiled water).
  • Step 4
    Place half of the mozzarella cheese over rice. Top with tomato slices. Then layer rest of mozzarella on top. Cover tightly
  • Step 5
    Place dish in other baking dish with boiled water. Bake for 30- 35 minutes.
