my teriyaki chicken fried rice
This recipe happened by accident. I was making chinese chicken dumplings and had way more chicken then dumplings so I made a fried rice with it and it was delicious.

Ingredients
- 1 cup shitake mushroom rough cut divided
- 6 - scallions
- 1 cup shredded jicama
- 3 cloves garlic
- 1/2 cup olive oil
- 1 pound ground chicken
- 1/4 cup soy sauce
- 2 tablespoons sugar
- - oil for frying
- 3 cups cooked day old rice
- 2 large eggs
- 1/2 cup teriyaki sauce
How To Make my teriyaki chicken fried rice

Step 1Place 1/2 cup of mushrooms in food processor and add 3 scallions green parts only, jicama, and garlic and process until until fine drizzling in the olive oil.

Step 2Mix the mushroom mixture with the chicken and add the soy sauce and sugar. Mix well.

Step 3Add oil to large pan or wok. Cook the chicken mixture along with the white parts of all 6 scallions and the other 1/2 cup of mushrooms.

Step 4When browned add the rice and cook until warmed. Add the Teriyaki sauce and cook until warmed through. Make a well in the middle and add the eggs stirring and incorporating the egg into the rice.

Step 5Serve with the remaining green parts of scallions sprinkled on top.
