my spanish rice

I normally dislike spanish rice so I came up with this recipe to suit my personal taste. My family likes it and it's not to hot.

Ingredients For my spanish rice

  • 2 c
    rice, instant
  • 1 can
    mexican corn
  • 1/2
    onion
  • 1
    bell pepper
  • 1 can
    beef consomme
  • 1 can
    rotel
  • 1 Tbsp
    butter, room temperature
  • 1 Tbsp
    olive oil, extra virgin

How To Make my spanish rice

  • 1
    Saute onion and bell pepper in butter and olive oil
  • 2
    Add the rice, rotel and mexican corn to the skillet. Saute for about a minute then add the beef consomme.

    Let simmer for a few minutes. Transfer mixture to a medium sized baking dish. Bake at 350 degrees for about 20 minutes or until rice is tender.
