I normally dislike spanish rice so I came up with this recipe to suit my personal taste. My family likes it and it's not to hot.

Ingredients

2 c
rice, instant
1 can(s)
mexican corn
1/2
onion
1
bell pepper
1 can(s)
beef consomme
1 can(s)
rotel
1 Tbsp
butter, room temperature
1 Tbsp
olive oil, extra virgin

How to Make My spanish rice

Step-by-Step

  • 1Saute onion and bell pepper in butter and olive oil
  • 2Add the rice, rotel and mexican corn to the skillet. Saute for about a minute then add the beef consomme.
  • 3Let simmer for a few minutes. Transfer mixture to a medium sized baking dish. Bake at 350 degrees for about 20 minutes or until rice is tender.
