my spanish rice

I normally dislike spanish rice so I came up with this recipe to suit my personal taste. My family likes it and it's not to hot.

Ingredients
- 2 cups rice, instant
- 1 can mexican corn
- 1/2 - onion
- 1 - bell pepper
- 1 can beef consomme
- 1 can rotel
- 1 tablespoon butter, room temperature
- 1 tablespoon olive oil, extra virgin
How To Make my spanish rice

Step 1Saute onion and bell pepper in butter and olive oil

Step 2Add the rice, rotel and mexican corn to the skillet. Saute for about a minute then add the beef consomme.

Step 3Let simmer for a few minutes. Transfer mixture to a medium sized baking dish. Bake at 350 degrees for about 20 minutes or until rice is tender.
