my spanish rice

I normally dislike spanish rice so I came up with this recipe to suit my personal taste. My family likes it and it's not to hot.

Ingredients For my spanish rice

2 crice, instant

1 canmexican corn

1/2onion

1bell pepper
-
1 canbeef consomme

1 canrotel

1 Tbspbutter, room temperature

1 Tbspolive oil, extra virgin
How To Make my spanish rice

1Saute onion and bell pepper in butter and olive oil

2Add the rice, rotel and mexican corn to the skillet. Saute for about a minute then add the beef consomme.

3Let simmer for a few minutes. Transfer mixture to a medium sized baking dish. Bake at 350 degrees for about 20 minutes or until rice is tender.
