Ingredients
- 2 cups minute rice
- 1 medium tomato, chopped
- 1/2 small onion, chopped
- 1 (4.5 oz. can chopped green chilies
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- 1/8 teaspoon salt (or to taste)
- 2 cups water
How To Make mexican rice

Step 1Heat 1 Tbsp. oil in skillet. Add onion, garlic and chilies.

Step 2Saute onion, garlic and chilies 5 minutes.

Step 3Add tomato and saute 3 more minutes. Set aside.

Step 4Brown the uncooked rice in 1 Tbsp. oil.

Step 5Add water, onion mixture and seasonings.

Step 6Bring to a boil. Cover and simmer until rice is done, about 5 minutes.

Step 7Stir to mix.
