This delicious rice is my cousin Nilsa's recipe.

Ingredients

  • 2 cups minute rice
  • 1 medium tomato, chopped
  • 1/2 small onion, chopped
  • 1 (4.5 oz. can chopped green chilies
  • 1 clove garlic, minced
  • 1/2 teaspoon cumin
  • 1/8 teaspoon salt (or to taste)
  • 2 cups water

How To Make mexican rice

  • Step 1
    Heat 1 Tbsp. oil in skillet. Add onion, garlic and chilies.
  • Step 2
    Saute onion, garlic and chilies 5 minutes.
  • Step 3
    Add tomato and saute 3 more minutes. Set aside.
  • Step 4
    Brown the uncooked rice in 1 Tbsp. oil.
  • Step 5
    Add water, onion mixture and seasonings.
  • Step 6
    Bring to a boil. Cover and simmer until rice is done, about 5 minutes.
  • Step 7
    Stir to mix.
