Ingredients

  • 2 c
    minute rice
  • 1 medium
    tomato, chopped
  • 1/2 small
    onion, chopped
  • 1 (4.5 oz. can(s)
    chopped green chilies
  • 1 clove
    garlic, minced
  • 1/2 tsp
    cumin
  • 1/8 tsp
    salt (or to taste)
  • 2 c
    water

How to Make Mexican Rice

Step-by-Step

  1. Heat 1 Tbsp. oil in skillet. Add onion, garlic and chilies.
  2. Saute onion, garlic and chilies 5 minutes.
  3. Add tomato and saute 3 more minutes. Set aside.
  4. Brown the uncooked rice in 1 Tbsp. oil.
  5. Add water, onion mixture and seasonings.
  6. Bring to a boil. Cover and simmer until rice is done, about 5 minutes.
  7. Stir to mix.
