I love Mexican Rice especially this recipe.

Ingredients

  • 3 tablespoons butter
  • 1 - small onion, diced
  • 1 clove garlic, minced
  • 1 1/2 cups rice
  • 2 cans chicken broth
  • 2 ( 10oz) cans rotel tomatoes
  • 1 (15oz) can corn, optional
  • 1 teaspoon cumin
  • - salt, to taste
  • 1 cup shredded jack cheese, optional

How To Make mexican rice

  • Step 1
    Saute onion in butter. Add rice and simmer until rice browns. Add rest of ingredients. Cover and simmer until liquid is absorbed into the rice.
  • Step 2
    Top with Shredded Jack cheese if using.
