I love Mexican Rice especially this recipe.

Ingredients

3 Tbsp
butter
1
small onion, diced
1 clove
garlic, minced
1 1/2 c
rice
2 can(s)
chicken broth
2 ( 10oz) can(s)
rotel tomatoes
1 (15oz) can(s)
corn, optional
1 tsp
cumin
salt, to taste
1 c
shredded jack cheese, optional

Step-By-Step

1Saute onion in butter. Add rice and simmer until rice browns. Add rest of ingredients. Cover and simmer until liquid is absorbed into the rice.
2Top with Shredded Jack cheese if using.
