Ingredients
- 3 tablespoons butter
- 1 - small onion, diced
- 1 clove garlic, minced
- 1 1/2 cups rice
- 2 cans chicken broth
- 2 ( 10oz) cans rotel tomatoes
- 1 (15oz) can corn, optional
- 1 teaspoon cumin
- - salt, to taste
- 1 cup shredded jack cheese, optional
How To Make mexican rice

Step 1Saute onion in butter. Add rice and simmer until rice browns. Add rest of ingredients. Cover and simmer until liquid is absorbed into the rice.

Step 2Top with Shredded Jack cheese if using.
