Tired of just rice so I flavored it up to make a great side dish for any entree. Served it for friends an it was a hit.

Ingredients For mexican baked rice

2 Tbspolive oil

2 Tbspbutter

1/2 cdiced onin

1/2 cdiced green pepper

1/4 ccanned jalapenos

1/2 cchicken broth

14 ozcan diced tomatoes with juice [no salt added]

11/2 cminute rice uncooked

1 tsptarragon

1 tsporegano

How To Make mexican baked rice

1In a large skillet saute onion and pepper in oil and butter. Add rice and and cook five minutes stirring often. Then add jalapenos, broth and tomatoes, stir well and bring to a boil. Mix in herbs, S+P and bring to a boil. Transfer to a casserole dish and bake at 350 till all the moisture is absorbed by the rice.
