Tired of just rice so I flavored it up to make a great side dish for any entree. Served it for friends an it was a hit.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup diced onin
  • 1/2 cup diced green pepper
  • 1/4 cup canned jalapenos
  • 1/2 cup chicken broth
  • 14 ounces can diced tomatoes with juice [no salt added]
  • 11/2 cups minute rice uncooked
  • 1 teaspoon tarragon
  • 1 teaspoon oregano
  • 1 teaspoon parsley

How To Make mexican baked rice

  • Step 1
    In a large skillet saute onion and pepper in oil and butter. Add rice and and cook five minutes stirring often. Then add jalapenos, broth and tomatoes, stir well and bring to a boil. Mix in herbs, S+P and bring to a boil. Transfer to a casserole dish and bake at 350 till all the moisture is absorbed by the rice.
