Ingredients

  • - 1 can coconut milk, 14 oz
  • - 1 cup jasmine rice
  • - 1/4 cup water
  • - 1/2 tsp.. salt
  • - 1/2 tsp. honey
  • - 1/2 tsp. crushed red pepper flakes
  • - 1/8 tsp. turmeric
  • - 1 tsp. minced fresh ginger

How To Make island coconut rice

  • Step 1
    Mix coconut milk, rice, water, salt, honey, red pepper flakes and turmeric in large pan. Mix well. Bring to a boil over medium heat, stirring constantly. Reduce heat to low. Simmer, covered, for 20 minutes. Fluff rice with a fork and spoon into a serving bowl. Sprinkle with the ginger. Garnish with sliced almonds and serve at once. Serves 4
