This recipe comes from the label of Ranch Style Brand Blackeye Peas Seasoned with Bacon. To me it is a classic southern dish served any time of the year. It is so changeable; add ground meat or sausage and it becomes a 1 pot main course or leave it as is for a great side. Plus add your own spices and/or peppers for a kick. I just love this dish and I am sure you will too. Enjoy.

Ingredients
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 clove minced garlic
- 2 cans (15 oz. each) ranch style blackeye peas seasoned with bacon
- 1 cup uncooked rice
- 1 cup chicken broth
How To Make hoppin' john

Step 1Heat oil in a large skillet. Add onion, celery and garlic. Cook 8 to 10 minutes until tender.

Step 2Stir in remaining ingredients. Heat to a boil; reduce heat and cover tightly.

Step 3Stirring occasionally, simmer 30 minutes or until liquid is absorbed.
