Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 3 large tomatoes peeled, seeded and chopped
  • 4 cups chicken stock
  • 1 tablespoon chicken bouillon
  • 2 cups long grain rice
  • - chopped cilantro for garnish

How To Make fresh tomato infused rice

  • Step 1
    Heat oil and butter in large pan over medium heat. Add the onion and cook until soft. Add garlic and cook another minute. Add the tomatoes. Cover and simmer over low heat for 15 minutes.
  • Step 2
    Puree tomato mixture with a immersion blender or remove and puree with a food processor. Add the stock and bouillon. Bring to a boil. Stir in rice and simmer covered for about 20 minutes.
  • Step 3
    Garnish with cilantro.
