easy mushroom "risotto"
I was trying to find a way to make rice a little less boring, and also sneak in some veggies for the kids.... a few hits and misses, and this yummy side dish was born. Everyone loves it, and it's so easy to make (and ready in just minutes!).

Ingredients
- 1 can cream of mushroom soup
- 1 can water
- 1/2 cup mushrooms, fresh or canned
- 1/2 cup frozen green peas
- 1 1/2 cups instant rice
How To Make easy mushroom "risotto"

Step 1Saute mushrooms in a scant amount of oil (or use non-stick spray). Set aside.

Step 2Whisk soup and water together until well blended. Bring to a low boil (too high and it will burn).

Step 3Add mushrooms, frozen peas, and rice. Mix well.

Step 4Cover and reduce heat to VERY low for 10 minutes. Fluff with fork and serve.
