This rice is expected at every family gathering, especially Thanksgiving and Christmas, and it is so easy to make. I love that I can get it started and have it cooking while I work on something else. I usually use Uncle Ben's Long Grain rice because it doesn't stick together like so many others do. The water that I add is not specifically necessary, but sometimes the rice is a little dry if I don't add it.

    beef consomme

water to bring amount of liquid to 3 1/3 cups

How to Make Dirty Rice

  1. Put rice in a microwave safe bowl with a lid. Sprinkle in a little salt to taste. (A pinch is usually sufficient.)
  2. Open and drain mushrooms and add to rice.
  3. Open beef consumme and french onion soup and pour into measuring cup making a note of how much liquid is there. Then add just enough water to bring liquid to 3 1/3 cups. (It usually isn't very much. It depends on the brands of soup that you use.)
  4. Pour liquid into rice and mushrooms. Add butter. Stir everything.
  5. Cover and microwave for 10 minutes on high power, then 20 minutes on 50% power.
