Ingredients
- 3 cups par boiled brown rice
- 2 tablespoons olive oil
- 1 - anaheim pepper, diced
- 12 ounces can of rotel
- 1/4 cup chili powder, mild
- 1 teaspoon cumin
- 1 teaspoon granulated garlic
- 1/2 teaspoon sea salt
- 2 tablespoons chicken bouillon granules
- 1 teaspoon annatto paste
- 1 teaspoon paprika
- 5 1/4 cups water
How To Make crowd size spanish rice

Step 1Add olive oil to large pot and heat. Add diced anaheim pepper and rice and dry spices, mix to combine well. Add rotel and water and bring to a boil. Reduce to a simmer and cook 20-25 min. Be sure to check your rice package for water to rice ratio and cooking time, as many brands differ.
