Here again, you can use a different variety of chutney.

Stove Top


  • 1 c
    onion, chopped
  • 1 c
    celery, chopped
  • 4 Tbsp
  • 3 c
    cooked rice, or 3/4 cup raw
  • 1/2 c
    flaked coconut
  • 1/4 c
    mango chutney
  • 1/2 tsp
    ground ginger
  • 1 tsp
    curry powder

How to Make Chutney Rice


  1. Cook the rice (if using raw). Meanwhile while it simmers; sauté onion and celery until barely tender. In the skillet add remaining ingredients. Toss lightly together and serve.
