Here again, you can use a different variety of chutney.

Ingredients

  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 4 tablespoons butter
  • 3 cups cooked rice, or 3/4 cup raw
  • 1/2 cup flaked coconut
  • 1/4 cup mango chutney
  • 1/2 teaspoon ground ginger
  • 1 teaspoon curry powder

How To Make chutney rice

  • Step 1
    Cook the rice (if using raw). Meanwhile while it simmers; sauté onion and celery until barely tender. In the skillet add remaining ingredients. Toss lightly together and serve.
