- 1 cup onion, chopped
- 1 cup celery, chopped
- 4 tablespoons butter
- 3 cups cooked rice, or 3/4 cup raw
- 1/2 cup flaked coconut
- 1/4 cup mango chutney
- 1/2 teaspoon ground ginger
- 1 teaspoon curry powder
How To Make chutney rice

Step 1Cook the rice (if using raw). Meanwhile while it simmers; sauté onion and celery until barely tender. In the skillet add remaining ingredients. Toss lightly together and serve.
