This rice dish is the perfect compliment to a grilled ribeye or blackened redfish filet. It's loaded with melted cheese and pickled jalapenos.

Ingredients

  • 2 cups uncooked instant rice
  • 1/2 cup vegetable oil
  • 4 - pickled jalapeno chopped
  • 1/2 pound velvetta cheese
  • 4 cups water
  • 4 - chicken bouillon cubes
  • 1/4 cup butter
  • - salt and pepper to taste
  • - chopped scallion for garnish

How To Make cheesy hot rice

  • Step 1
    in large pot fry uncooked rice, onion and pepper in oil until onion begins to become tender, do not brown. add remaining ingredients and cooked uncovered over low heat until done.
  • Step 2
    For added touch, serve in small bacon bowls and top with chopped scallions.
