This rice dish is the perfect compliment to a grilled ribeye or blackened redfish filet. It's loaded with melted cheese and pickled jalapenos.

Ingredients
- 2 cups uncooked instant rice
- 1/2 cup vegetable oil
- 4 - pickled jalapeno chopped
- 1/2 pound velvetta cheese
- 4 cups water
- 4 - chicken bouillon cubes
- 1/4 cup butter
- - salt and pepper to taste
- - chopped scallion for garnish
How To Make cheesy hot rice

Step 1in large pot fry uncooked rice, onion and pepper in oil until onion begins to become tender, do not brown. add remaining ingredients and cooked uncovered over low heat until done.

Step 2For added touch, serve in small bacon bowls and top with chopped scallions.
