This is how I like my potato salad.

Ingredients

  • - 3 pounds red or gold yukon potatoes
  • - 1 1/4 cups hellmann's mayonnaise
  • - 1/2 cup sour cream
  • - 1 tablespoon prepared mustard
  • - 1 tablespoon apple cider vinegar
  • - 1 teaspoon salt
  • - 1/2 teaspoon pepper
  • - 1 teaspoon sugar
  • - 1/2 cup finely chopped celery
  • - 1/2 cup finely chopped red onion
  • - 1/2 cup finely chopped green pepper
  • - 2 tablespoons finely chopped pimento
  • - 1 finely chopped jalapeno
  • - 5 hard boiled eggs, finely chopped
  • - 1/4 cup dill pickle relish

How To Make yummy potato salad

  • Step 1
    Add potatoes to enough water to cover in large pot. Bring to a boil. Boil until tender; drain. Chill in refrigerator until cool enough to handle.
  • Step 2
    Peel potatoes and chop; set aside. Combine mayonnaise, sour cream, mustard, vinegar, salt, pepper and sugar in bowl and mix well. Stir in celery, onion, green pepper, pimento and jalapeno. Fold in potatoes, eggs and relish.
  • Step 3
    Chill overnight for best flavor. Garnish with paprika.
