winter sweet potato and cranberry casserole

Ingredients

  • 1 can sweet potatoes (yams) drained (40 oz)
  • 1 package fresh whole cranberries (not always available, so i use a good quality dried and reconstitute them in hot water and then drain)
  • 1 1/4 cups sugar
  • 1 small orange sliced with skin and quartered
  • 1/4 cup orange juice
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup pecan pieces

How To Make winter sweet potato and cranberry casserole

  • Step 1
    Combine cranberries, oranges, and sweet potatoes (gently so you don't break down the sweet potatoes too much) in 2 quart casserole. Combine orange juice, spices and sugar. Pour over the top ands sprinkle with pecans. Bake at 375 uncovered about 30 minutes.
  • Step 2
    This recipe was doubled to serve today in a 9 X 12 dish, so I cut down on the sugar to about 2 cups total.
