winter sweet potato and cranberry casserole

Ingredients
- 1 can sweet potatoes (yams) drained (40 oz)
- 1 package fresh whole cranberries (not always available, so i use a good quality dried and reconstitute them in hot water and then drain)
- 1 1/4 cups sugar
- 1 small orange sliced with skin and quartered
- 1/4 cup orange juice
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup pecan pieces
How To Make winter sweet potato and cranberry casserole

Step 1Combine cranberries, oranges, and sweet potatoes (gently so you don't break down the sweet potatoes too much) in 2 quart casserole. Combine orange juice, spices and sugar. Pour over the top ands sprinkle with pecans. Bake at 375 uncovered about 30 minutes.

Step 2This recipe was doubled to serve today in a 9 X 12 dish, so I cut down on the sugar to about 2 cups total.
