Winter Sweet Potato and Cranberry Casserole
1 can(s)sweet potatoes (yams) drained (40 oz)
1 pkgfresh whole cranberries (not always available, so i use a good quality dried and reconstitute them in hot water and then drain)
1 1/4 csugar
1 smallorange sliced with skin and quartered
1/4 corange juice
1/2 cpecan pieces
How to Make Winter Sweet Potato and Cranberry Casserole
- Combine cranberries, oranges, and sweet potatoes (gently so you don't break down the sweet potatoes too much) in 2 quart casserole. Combine orange juice, spices and sugar. Pour over the top ands sprinkle with pecans. Bake at 375 uncovered about 30 minutes.
- This recipe was doubled to serve today in a 9 X 12 dish, so I cut down on the sugar to about 2 cups total.
