Wow, these Texas potatoes are creamy and full of flavor. We love how the fresh onions blend with the creamy soup and sour cream to create a yummy sauce. On top is a buttery cracker mixture that gets crunchy and golden brown. These are good enough to serve for a holiday or special occasion, but easy enough to make any time you feel like a potato side dish.

Ingredients
- 1/2 cup chopped onion
- 2 cans cream of chicken soup (10.5 oz each)
- 1 package sour cream (8 oz)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 package diced hash brown potatoes, frozen (2 lbs)
- 1/2 cup melted butter, divided
- 1 - 2 - sleeves of Ritz crackers

Every oven is different. At 45 minutes ours weren't bubbly. We cooked them for another 10 minutes and it was perfect.

Step 1Preheat oven to 350 degrees. Mix the first five ingredients and 1/4 cup of the melted butter in a mixing bowl.

Step 2Add hash browns and mix well.

Step 3Pour into a greased 9 x 13 pan.

Step 4Crumble Ritz crackers and mix with remaining melted butter.

Step 5Sprinkle on top of the potato mixture.
