My family absolutely loved this one skillet potato dish...wonderful flavors and so tender...I hope you'll try this delicious combination of flavors sometime...you won't be disappointed...

Ingredients

  • 8 ounces package bacon, cooked crisp - drained and crumbled
  • 1 large sweet onion, sliced
  • 2 cloves garlic, chopped
  • 5 medium russet potatoes - skin on and diced to about 1 1/2 inch pieces
  • 1 1/2 cups frozen spinach, thawed not necessary
  • 1 - 14.5 ounces can chicken broth
  • salt - & pepper to taste

How To Make tender n tasty potatoes

  • Step 1
    In a large skillet; cook bacon until crisp; remove to paper towel to drain. In same skillet, in bacon grease - saute onions until translucent and starting to brown. Add garlic when onions are almost done. Cook another minute or two, making sure garlic doesn't burn.
  • Step 2
    Add potatoes, spinach, salt and pepper and broth. Bring to a boil, then lower heat to simmer. Cover and continue cooking until potatoes are tender. About 25 minutes.
  • Step 3
    When potatoes are fork tender; sprinkle with the crumbled bacon and serve.
  • Step 4
    Delicious!
