  • ·
    3 cups sweet potatoes, cooked and mashed.
  • ·
    1/4 cup butter, softened
  • ·
    1 teaspoon salt
  • ·
    2 tablespoons brown sugar
  • ·
    1/2 cup crushed pineapple, drained
  • ·
    1 egg, slightly beaten
  • ·
    1 cup dry bread crumbs
  • ·
    oil for deep frying

How to Make Sweet Potato Croquettes


  1. Mix sweet potatoes, butter, brown sugar, salt, and drained crushed pineapple.
    Shape into balls 1-1/2 inches in diameter
  2. Dip each ball in beaten egg and roll in bread crumbs.
  3. Deep fry in oil 375 - 385 degrees until brown
