- - 1 teaspoon salt
- - 2 tablespoons brown sugar
- - 1/2 cup crushed pineapple, drained
- - 1 egg, slightly beaten
- - 1 cup dry bread crumbs
- - oil for deep frying
How To Make sweet potato croquettes

Step 1Mix sweet potatoes, butter, brown sugar, salt, and drained crushed pineapple. Shape into balls 1-1/2 inches in diameter

Step 2Dip each ball in beaten egg and roll in bread crumbs.

Step 3Deep fry in oil 375 - 385 degrees until brown
