Ingredients
- 3 cups sweet potatoes,mashed (about 4 large potatoes)
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup sugar
- 2 - eggs
- 1/2 cup melted margarine
- **TOPPING**
- 1 cup brown sugar, light
- 1/3 cup flour
- 1/3 cup melted margarine
- 1 cup chopped pecans
- **PREHEAT OVEN 325 DEGREES**
How To Make sweet potato casserole

Step 1Boil sweet potatoes in a large pot of boiling water. When tender, remove and peel off skin. Mash 3 cups of potatoes and place in a large bowl. Add vanilla, milk, sugar, eggs, and margarine and mix thoroughly. Place in a greased casserole dish.

Step 2Mix the topping ingredients together in a small bowl. Sprinkle on top of the sweet potato casserole. Bake at 325* for 30 minutes.

Step 3note--you can use canned yams if you do not have access to fresh potatoes. 2 cans equal 3 cups of sweet potatoes.
