ROASTED ROSEMARY POTATOES

Ingredients

1-1/2 lbyukon gold potatoes
-
1-1/2 conions, sliced
-
1/2 tspgarlic, minced
-
2 Tbspolive oil
-
1 Tbspfresh rosemary, minced
-
`/2 Tbspbrown sugar
-
2 Tbspbutter
-
·salt and pepper
How to Make ROASTED ROSEMARY POTATOES
- Preheat oven to 350
- Cook the potatoes in water for 20 minutes.
Cool.
Cut into medium sized cubes. - Slowly sauté onions in olive oil until caramelized (about 20-25 minutes over moderate heat).
Season with salt and pepper.
Add butter, garlic, and brown sugar.
Stir for an additional minute.
Add the potatoes and rosemary. - Transfer to a baking dish.
Roast potatoes for 30-35 minut4es until brown and crispy.
Stir occasionally.
