Ingredients

  • 1-1/2 pound yukon gold potatoes
  • 1-1/2 cup onions, sliced
  • 1/2 teaspoon garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, minced
  • `/2 tablespoon brown sugar
  • 2 tablespoons butter
  • - salt and pepper

How To Make roasted rosemary potatoes

  • Step 1
    Preheat oven to 350
  • Step 2
    Cook the potatoes in water for 20 minutes. Cool. Cut into medium sized cubes.
  • Step 3
    Slowly sauté onions in olive oil until caramelized (about 20-25 minutes over moderate heat). Season with salt and pepper. Add butter, garlic, and brown sugar. Stir for an additional minute. Add the potatoes and rosemary.
  • Step 4
    Transfer to a baking dish. Roast potatoes for 30-35 minut4es until brown and crispy. Stir occasionally.
