- 4 large russet potatoes peeled washed and diced
- 1/4 cup olive oil
- 1/4 cup butter melted
- 1/3 cup mayonnaise
- 4 cloves garlic minced
- 2 tablespoons fresh parsley minced
- - salt and pepper to taste
- - fresh shredded parmesan cheese for serving
How To Make roasted potatoes in garlic aioli

Step 1Mix all ingredients except potatoes and parmesan cheese together in a bowl. Toss in potatoes and coat well.

Step 2Place the potatoes in roasting pan and roast in oven at 350 degrees for 45 minutes.
