  • 4 large
    russet potatoes peeled washed and diced
  • 1/4 c
    olive oil
  • 1/4 c
    butter melted
  • 1/3 c
  • 4 clove
    garlic minced
  • 2 Tbsp
    fresh parsley minced
  • ·
    salt and pepper to taste
  • ·
    fresh shredded parmesan cheese for serving

How to Make Roasted Potatoes in Garlic Aioli


  1. Mix all ingredients except potatoes and parmesan cheese together in a bowl. Toss in potatoes and coat well.
  2. Place the potatoes in roasting pan and roast in oven at 350 degrees for 45 minutes.
  3. Sprinkle with parmesan cheese to serve
