I threw this together one night to go with our marinated grilled asparagus and yummy steak. These were very yummy.

Incredibly easy to make, they're made with only a few ingredients and pack a big punch of flavor from the garlic, Italian seasoning, and green onions. Melted Parmesan cheese on top adds not only savoriness but a nice flavor to the roasted potatoes. Following this recipe, the potatoes are roasted in the oven; this could easily be prepared on a grill.

  • 5 medium red potatoes
  • 2 stalks green onion, sliced
  • 1 tablespoon minced garlic
  • Italian seasoning, to taste
  • olive oil
  • 1/4 cup Parmesan cheese

How large you slice the potatoes will determine the baking time. We cut ours into quarters (a little bigger than Wendy's), and ours took about 45 minutes to cook.
