10 mediumyukon gold or any variety, cut into cubes and leave unpeeled
1 Tbspgarlic minced
1/4 cparmesan cheese
2 Tbspdried or fresh parsley

- In a large saucepan add your cubed potatoes and enough water just to cover. On medium/low heat, cook your potatoes until they are al dente in center.
- Turn your heat on low and add garlic, parsley, and butter and cook until potatoes are completely tender in center. Sprinkle parmesan over top of potatoes and serve.
