Ingredients
- 1 small onion, minced
- 1 - 23 ounces salsa con queso ( med heat )
- 1 - 30 ounces shredded hash browns - or have used cubed style homefries
- 1 - 8 ounces sour cream
- 1 stick butter, melted
- 1 - 16 ounces shredded, fiesta blend cheese
How To Make ~ mexican inspired hashbrown casserole ~

Step 1Preheat oven to 350 degree F. Mix all ingredients in a large bowl except for the Fiesta blend cheese.

Step 2Spray a 9 x 12 baking dish with non stick cooking spray. Spread hash brown mixture evenly into prepared dish. Bake for 50 minutes and remove from oven.

Step 3Sprinkle evenly with shredded cheese and bake another 10 - 15 minutes or until cheese is melted and bubbly.

Step 4Remove from oven and leave set up about 5 minutes, before cutting. Enjoy!
