These potatoes were a perfect pairing with the cheesy chicken dish I made for supper. Enjoy!

Ingredients

  • 1 small onion, minced
  • 1 - 23 ounces salsa con queso ( med heat )
  • 1 - 30 ounces shredded hash browns - or have used cubed style homefries
  • 1 - 8 ounces sour cream
  • 1 stick butter, melted
  • 1 - 16 ounces shredded, fiesta blend cheese

How To Make ~ mexican inspired hashbrown casserole ~

  • Step 1
    Preheat oven to 350 degree F. Mix all ingredients in a large bowl except for the Fiesta blend cheese.
  • Step 2
    Spray a 9 x 12 baking dish with non stick cooking spray. Spread hash brown mixture evenly into prepared dish. Bake for 50 minutes and remove from oven.
  • Step 3
    Sprinkle evenly with shredded cheese and bake another 10 - 15 minutes or until cheese is melted and bubbly.
  • Step 4
    Remove from oven and leave set up about 5 minutes, before cutting. Enjoy!
