loaded potato salad
They had some variation of this at my grocery store, called smashed potato salad, I've also seen it referred to as twice baked potato salad, but in all the deli versions I've seen, the potatoes tasted canned, also used dried chives and fake bacon bits, yuck, but inspired me to create this dish. My family just loves it and begs me to make it for every cook out and summer get together!

Ingredients
- 3 pounds cooked, diced potatoes, chilled
- 12 ounces bacon, cooked and crumbled
- 1 bunch green onions, thinly sliced
- 1 package (8 oz.) shredded cheddar cheese
- 1/2 teaspoon ground pepper
- 1 1/2 teaspoons salt
- 1 cup real mayonnaise
- 16 ounces container of sour cream
