Ingredients

  • 4 pounds yukon gold potatoes
  • 2 - jalapenos, seeded and diced
  • 3 - green onions, chopped
  • 4 slices bacon, cooked and crumbled
  • 4 - hard boiled eggs, sliced
  • 2 tablespoons prepared horseradish
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper

How To Make kicked up potato salad

  • Step 1
    Fill a pot with water. Add salt and potatoes and bring to a boil. Cook for about 15 minutes or until tender. Drain and set aside to cool.
  • Step 2
    In a large bowl, combine sour cream, horseradish, mayo, jalapeno, green onion and black pepper. Mix until fully incorporated.
  • Step 3
    Fold bacon, potatoes, and hard boiled eggs into the mixture. Cover and refrigerate for 1 hour before serving.
