I love making these potatoes while baking the kitchen smells like Thanksgiving. Great tasting side dish.

Ingredients

2 lb
red potatoes scubbed and diced
1 stick
butter divided
2 Tbsp
herbes de provence
1 Tbsp
salt
1 Tbsp
fresh thyme minced
1 Tbsp
fresh rosemary minced
2 tsp
pepper

How to Make Herb Roasted Red Potatoes

Step-by-Step

  • 1Preheat oven 350 degrees.
  • 2Place 1/2 stick butter in 9 x 13 baking pan and place in oven until butter is melted.
  • 3Remove pan from oven and add the potatoes. Sprinkle all the herbs evenly over the top of potatoes. Cut the remaining butter into pieces and arrange on top of potatoes.
  • 4Place pan in oven and bake 30 minutes or until potatoes are tender.
