herb roasted red potatoes
I love making these potatoes while baking the kitchen smells like Thanksgiving. Great tasting side dish.

Ingredients
- 2 pounds red potatoes scubbed and diced
- 1 stick butter divided
- 2 tablespoons herbes de provence
- 1 tablespoon salt
- 1 tablespoon fresh thyme minced
- 1 tablespoon fresh rosemary minced
- 2 teaspoons pepper
How To Make herb roasted red potatoes

Step 1Preheat oven 350 degrees.

Step 2Place 1/2 stick butter in 9 x 13 baking pan and place in oven until butter is melted.

Step 3Remove pan from oven and add the potatoes. Sprinkle all the herbs evenly over the top of potatoes. Cut the remaining butter into pieces and arrange on top of potatoes.

Step 4Place pan in oven and bake 30 minutes or until potatoes are tender.
