In the Biegacki home, this is pure comfort food! Potatoes, onion & garlic are a mouth watering combination. As they cook up low & slow they reach a tender perfection. I must say, I ALWAYS use "red" potatoes & the sweetest onion I can find for this hash. I also slice & dice everything up small so it cooks quickly and evenly. Sour cream gives a touch of tang & creaminess along with the mozzarella that finishes the hash with another soft layer of flavor... soft, creamy, tender bites of this delicious potato hash is perfect for a side dish or just a bowl of hash by itself is satisfying too.

Ingredients For heavenly white hash

  • 4 md
    red potatoes, peeled & sliced, matchstick cut
  • 1/2 sm
    sweet onion, diced
  • 2 clove
    garlic, minced or 1/2 tsp of garlic powder
  • 2 Tbsp
    sour cream
  • 2-3 pinch
    mozzarella cheese
  • salt and pepper
  • 1 1/2 tsp
    greek seasoning
  • 2 Tbsp
    olive oil
  • 1 Tbsp
    butter

How To Make heavenly white hash

    Peel & slice up your red potatoes, sweet onion and garlic while you heat your oil & butter in a frying pan. Put it on a low heat as these will be cooked low and slow....no browning on the potatoes for this recipe. Add your onions and cook for about 5 -7 minutes on low heat stirring often. Then add your potatoes and garlic. Next time I will take a pic of how I slice the potato.

    Cook your potatoes for 7 - 10 minutes stirring often on a low heat...low & slow for the entire cooking time. Add your Greek seasoning, salt & pepper. Once potatoes are cooked through add 2 - 3 tbps of sour cream and stir around in pan. Then, add your mozzarella cheese and let it cook just till cheese is melted. Serve immediately.
