This is a superior garlic mashed recipe! I prepared them the first night and served as a side to a ribeye steak - delicious! We had them for leftovers the next night with pork chops and they might have even tasted better!

Ingredients

head garlic
2 lb
(about 4 large) red potatoes, scrubbed and unpeeled
2 Tbsp
butter
2 Tbsp
sour cream
2 Tbsp
milk
3 Tbsp
parmesan cheese
4
green onions, chopped (including green stem)
1/4 tsp
coarse ground black pepper
salt, to taste

How to Make Garlic Mashed Potatoes with Parmesan

Step-by-Step

  • 1Cut 1/4-inch off head of garlic and discard. Wrap garlic in foil and roast in 400 degree F. oven for 40 minutes.
  • 2Meanwhile, place potatoes in large pot and cover with water. Heat and boil about 20 minutes or until tender; drain.
  • 3Slightly mash potatoes and add butter, sour cream, milk, Parmesan cheese, green onion, pepper and salt to taste. Continue mashing until smooth. Serve hot.
  • 4Squeeze roasted garlic from head and stir into potato mixture.
