easy maple mashed sweet potatoes
The addition of maple syrup makes these pleasantly different. This dish was always popular when I catered holiday dinners. The amount of syrup here is what I use but you may certainly add more or less if you like. I have also cut it down as I doubt that very many folks will be having 100 at their table *wink*. Prep time is actually the mixing time after the potatoes have been baked. Also, this can be made the day before and gently reheated (covered) before serving.

Ingredients
- 3-4 - medium sweet potatoes, about 2 pounds
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1/4 cup maple syrup (or to taste)
- 1 1/2 teaspoons cinnamon (or to taste)
- 1/4 cup half-and-half
How To Make easy maple mashed sweet potatoes

Step 1Bake sweet potatoes until tender. Let cool slightly, peel.

Step 2Mash with salt, butter, and maple syrup.

Step 3Add cinnamon to taste then continue to mash with the half-and-half to desired consistency.
