Deep Fried Mashed Potatoes
2 ccold mashed potatoes put through a ricer or food processor
3 largeeggs divided
1 Tbspparsley minced
1/4 cparmesan cheese
2 tspdried minced onion
3 clovegarlic minced
1/4 ccooked and crumbled bacon
·salt and pepper to taste
1 cpanko bread crumbs
·oil for frying
How to Make Deep Fried Mashed Potatoes
- Mix together mashed potatoes, 1 egg, parsley, parmesan cheese, onion, bacon, garlic, and salt and pepper. Place mixture in freezer for 20 minutes.
- Whip the 2 remaining eggs in one bowl. Add bread crumbs to another bowl. Take mashed potatoes and roll them into a ball. Dip in egg mixture then roll in bread crumbs. Place back in freezer for 15 minutes.
- Deep fry 375 degrees for about 3 or 4 minutes.
