Ingredients
- 2 cups cold mashed potatoes put through a ricer or food processor
- 3 large eggs divided
- 1 tablespoon parsley minced
- 1/4 cup parmesan cheese
- 2 teaspoons dried minced onion
- 3 cloves garlic minced
- 1/4 cup cooked and crumbled bacon
- - salt and pepper to taste
- 1 cup panko bread crumbs
- - oil for frying
How To Make deep fried mashed potatoes

Step 1Mix together mashed potatoes, 1 egg, parsley, parmesan cheese, onion, bacon, garlic, and salt and pepper. Place mixture in freezer for 20 minutes.

Step 2Whip the 2 remaining eggs in one bowl. Add bread crumbs to another bowl. Take mashed potatoes and roll them into a ball. Dip in egg mixture then roll in bread crumbs. Place back in freezer for 15 minutes.

Step 3Deep fry 375 degrees for about 3 or 4 minutes. Serve
