Ingredients For deep fried mashed potatoes

  • 2 c
    cold mashed potatoes put through a ricer or food processor
  • 3 lg
    eggs divided
  • 1 Tbsp
    parsley minced
  • 1/4 c
    parmesan cheese
  • 2 tsp
    dried minced onion
  • 3 clove
    garlic minced
  • 1/4 c
    cooked and crumbled bacon
  • salt and pepper to taste
  • 1 c
    panko bread crumbs
  • oil for frying

How To Make deep fried mashed potatoes

  • 1
    Mix together mashed potatoes, 1 egg, parsley, parmesan cheese, onion, bacon, garlic, and salt and pepper. Place mixture in freezer for 20 minutes.

    Whip the 2 remaining eggs in one bowl. Add bread crumbs to another bowl. Take mashed potatoes and roll them into a ball. Dip in egg mixture then roll in bread crumbs. Place back in freezer for 15 minutes.

    Deep fry 375 degrees for about 3 or 4 minutes. Serve
