Ingredients
- 4 medium potatoes, peeled, 1-inch cubes
- 8 tablespoons cream cheese
- 1/3 cup 2% milk
- 1/3 cup chives, chopped or 2t dried
- - salt and pepper, to taste
How To Make cream cheese and chive mashed potatoes (low-fat)

Step 1In medium saucepan over high heat, boil potatoes in 2 inches of water about 12 minutes, or until tender; drain thoroughly.

Step 2Shake potatoes in pan 1 to 2 minutes over low heat to dry thoroughly.

Step 3Mash potatoes with electric mixer or potato masher.

Step 4Mix in cheese until melted.

Step 5Mix in milk and chives.

Step 6Season with salt and pepper. (Do not over beat).

Step 7Stir gently over low heat just until heated through.
