Ingredients

  • 4 medium potatoes, peeled, 1-inch cubes
  • 8 tablespoons cream cheese
  • 1/3 cup 2% milk
  • 1/3 cup chives, chopped or 2t dried
  • - salt and pepper, to taste

How To Make cream cheese and chive mashed potatoes (low-fat)

  • Step 1
    In medium saucepan over high heat, boil potatoes in 2 inches of water about 12 minutes, or until tender; drain thoroughly.
  • Step 2
    Shake potatoes in pan 1 to 2 minutes over low heat to dry thoroughly.
  • Step 3
    Mash potatoes with electric mixer or potato masher.
  • Step 4
    Mix in cheese until melted.
  • Step 5
    Mix in milk and chives.
  • Step 6
    Season with salt and pepper. (Do not over beat).
  • Step 7
    Stir gently over low heat just until heated through.
