crash hot potatoes

This is not my recipe; however, I couldn't resist sharing it! These look SOOO delicious! Friend of a friend on Facebook. I'll be making these for dinner this week!! My mind is going crazy with the variations! Bacon...top with sour cream and chives to serve...the list goes on!

Ingredients
- - baby red potatoes
- - olive oil
- - herbs and spices of choice
- - garlic
- - salt and pepper
- - parmesan cheese or other cheese per taste
How To Make crash hot potatoes

Step 1Preheat oven to 450 degrees. Boil some baby potatoes until fork tender.

Step 2Drizzle olive oil on a baking sheet, set potatoes on sheet and using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie).

Step 3Drizzle with olive oil, season with salt/pepper and sprinkle cut fresh herbs and garlic over each. Top with grated Parmesan cheese.

Step 4Bake for 20 minutes. Should be crispy on the outside and still soft inside.
