colcannon (irish potatoes)

We made this for st. Paddys day one year and after tweaking it slightly it has become a family favorite. If you love loaded mashed potatoes you should try this recipe! My kids actually request it. I hope that you enjoy it!

Ingredients
- 3 lbs medium russet potatoes
- 1 cup stick butter or margarine
- 1/2 cup - whole milk
- 1/2 - head of green cabbage
- 1/2 pound bacon
How To Make colcannon (irish potatoes)

Step 1Peel and cube potatoes. Cover with cold water and 1tsp salt. Bring to boil for 20-25 minutes till just fork tender. Drain immediately.

Step 2While potatoes are cooking, cut off half head of cabbage. Remove yellow inner leaves. They will be bitter. Chop into bite size pieces. Set aside. Chop bacon into small pieces.

Step 3In a skillet fry up bacon adding a Tbsp or 2 of water to keep it from getting too crispy. Remove cooked bacon and add cabbage. Stir fry until wilted and tender. Add 1/2 c or 1 stick butter. Season with S&P.

Step 4By now your potatoes should be tender. Drain. Add 1/2 c or 1 stick butter to potatoes and mash. Season with S&P. Add milk and beat in until creamy and smooth. Then fold in cabbage and then bacon bits. . Serve warm.. Enjoy
