OMG! How good is this? I love, love, love colcannon and using leftovers, if there is such a thing, would be such a brilliant idea! I can't wait to try it! Recipie & photo: The Country Cooking of Ireland

Ingredients

  • 2 cups leftover colcannon (see my recipe "ellen's irish channel colcannon")
  • 2/3 cup all purpose flour
  • 4 tablespoons butter
  • - salt and pepper to taste

How To Make colcannon cakes

  • Step 1
    In a medium bowl, combine the colcannon and the flour, mixing well. Form the mixture into 6 cakes of equal size, about 3/4-inches thick. Season to taste with salt and pepper.
  • Step 2
    In a large skillet, melt the butter over medium heat. Fry cakes on both sides, turning once and pressing down lightly with a spatula, until golden brown--about 4 minutes per side.
