Cajun Potato Salad

Potato salads great when you barbecue, grill, or have a fish fry. Let's admit the same old potato salad can be boring. Why not kick it up an notch? That's exactly what this recipe does.

2 lb
small red potatoes
1/2 c
sliced green onion
6 Tbsp
cider vinegar
6 Tbsp
vegetable oil
2 c
garlic, minced
1/2 tsp
cayenne pepper
1/2 dash(es)
chopped red onion
1/4 c
minced fresh parsley
1 lb
cajun sausage, sliced
1 Tbsp
creole mustard
1/2 tsp


1Cook potatoes in boiling water for 20 to 30 minutes or until tender. Drain. Rinse with cold water and cool completely.
2Cut into 1/4 inch slices, place in a large bowl.
3Add onions, parsley, and 3 tablespoons vinegar and toss.
4Ina medium skillet, cook sausage in oil for 5 to 10 minutes or until browned. Remove with a slotted spoon and add to potato mixture.
5To drippings in the skillet, add mustard, garlic, pepper, cayenne, and remaining vinegar. Bring to a boil, whisking constantly.
6Pour over salad and toss gently. Serve immediately.
