Ingredients

  • 2 lb
    small red potatoes
  • 1/2 c
    sliced green onion
  • 6 Tbsp
    cider vinegar
  • 6 Tbsp
    vegetable oil
  • 2 c
    garlic, minced
  • 1/2 tsp
    cayenne pepper
  • 1/2 dash(es)
    chopped red onion
  • 1/4 c
    minced fresh parsley
  • 1 lb
    cajun sausage, sliced
  • 1 Tbsp
    creole mustard
  • 1/2 tsp
    pepper

How to Make Cajun Potato Salad

Step-by-Step

  1. Cook potatoes in boiling water for 20 to 30 minutes or until tender. Drain. Rinse with cold water and cool completely.
  2. Cut into 1/4 inch slices, place in a large bowl.
  3. Add onions, parsley, and 3 tablespoons vinegar and toss.
  4. Ina medium skillet, cook sausage in oil for 5 to 10 minutes or until browned. Remove with a slotted spoon and add to potato mixture.
  5. To drippings in the skillet, add mustard, garlic, pepper, cayenne, and remaining vinegar. Bring to a boil, whisking constantly.
  6. Pour over salad and toss gently. Serve immediately.
