broccoli - bacon baked potatoes w/ cheese sauce

I make these for lunch or dinner...the home made cheese sauce is so good...I made these last night for the kids...they were very satisfied...served with a side tossed salad...makes a nice filling meal...enjoy!

Ingredients

  • 4 medium to large baking potatoes
  • oil - for rubbing potatoes - i use olive oil
  • 4 slices bacon, cooked and crumbled
  • 2 cups broccoli florets - steamed or boiled
  • CHEESE SAUCE
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • pinch - pepper
  • 1 cup milk
  • 1 cup grated cheese - i use cheddar

How To Make broccoli - bacon baked potatoes w/ cheese sauce

  • Step 1
    Preheat oven to 400 degree F. Wash potatoes, dry well. Rub with oil. Prick potatoes with a fork. Bake for 1 hour or until fork tender. While they bake; prepare broccoli, either steam or boil in salted water. Just until crisp tender ( not mushy ) Prepare cheese sauce: Melt butter over medium heat. Add flour and stir until smooth. Add salt, pepper and milk. Stir until thick and bubbly. Gradually stir in grated cheese until it melts. When potatoes are baked; split open, fluff the potato with a fork, add a little butter, evenly divide bacon, divide broccoli, and drizzle with cheese sauce...so yummy and satisfying...salt and pepper to taste.
