Ingredients

2 large
idaho potatoes
4 slice
bacon, quartered
1/2 c
green onions, chopped
2 Tbsp
parmesan cheese, grated
1/2 c
sour cream
1/2 tsp
salt
1/2 tsp
freshly ground white pepper
butter
paprika

How to Make Brennan's Stuffed Baked Potatoes

Step-by-Step

  • 1Scrub potatoes and bake 1 hour at 400F.
  • 2Grill bacon pieces until crisp.
  • 3Drain off bacon fat except 3 tablespoons.
  • 4Add green onions and saute slowly.
  • 5Cut potatoes in half lengthwise and scoop out the inside into a skillet, taking care to retain shells intact.
  • 6Add cheese, sour cream, and salt and pepper to potato, green onions and bacon, mixing and mashing to blend thoroughly.
  • 7Return the skillet to low heat and heat through.
  • 8Stuff mixture into potato skins.
  • 9Drizzle with melted butter, and sprinkle with paprika.
  • 10Bake 15 to 20 minutes at 350F.
