    potatoes (6 medium)
  • 1/2
    onion, grated
  • 2 Tbsp
  • 2
    eggs, beaten
  • 1 1/2 tsp
  • 1/4 tsp
  • 1/4 tsp
    grated nutmeg
  • 2 Tbsp
    minced parsley
  • ·
    butter or oil for frying

How to Make Bev's Potato Pancakes


  1. Peel potatoes; grate and squeeze water out. Add onion and mix.
  2. Add flour, eggs, salt, pepper, nutmeg and parsley. Mix.
  3. Cook like pancakes on hot buttered or oiled griddle.
