- 1 pound red onions, peeled and sliced 1/2 inch thick
- 3 pounds potatoes, peeled and sliced 1/2 inch thick
- 1 cup butter
- - salt and freshly ground black pepper
- 6 - sage leaves, ghopped
- 3/4 cup balsamic vinegar
How To Make balsamic roasted onions and potatoes

Step 1Preheat oven to 400 degrees

Step 2Melt butter in a large skillet, add potatoes and onions, stir to coat

Step 3Cook over medium heat stirring occasionally until golden brown

Step 4Season with salt and pepper, add sage and 1/2 the vinegar and mix

Step 5Place in an oven proof dish, cover and bake for 20 minutes

Step 6Add remaining vinegar and bake uncovered for 20-30 minutes or until potatoes are tender
