Ingredients

  • 1 lb
    red onions, peeled and sliced 1/2 inch thick
  • 3 lb
    potatoes, peeled and sliced 1/2 inch thick
  • 1 c
    butter
  • ·
    salt and freshly ground black pepper
  • 6
    sage leaves, ghopped
  • 3/4 c
    balsamic vinegar

How to Make Balsamic Roasted Onions and Potatoes

Step-by-Step

  1. Preheat oven to 400 degrees
  2. Melt butter in a large skillet, add potatoes and onions, stir to coat
  3. Cook over medium heat stirring occasionally until golden brown
  4. Season with salt and pepper, add sage and 1/2 the vinegar and mix
  5. Place in an oven proof dish, cover and bake for 20 minutes
  6. Add remaining vinegar and bake uncovered for 20-30 minutes or until potatoes are tender
