Ingredients

  • 1 pound red onions, peeled and sliced 1/2 inch thick
  • 3 pounds potatoes, peeled and sliced 1/2 inch thick
  • 1 cup butter
  • - salt and freshly ground black pepper
  • 6 - sage leaves, ghopped
  • 3/4 cup balsamic vinegar

How To Make balsamic roasted onions and potatoes

  • Step 1
    Preheat oven to 400 degrees
  • Step 2
    Melt butter in a large skillet, add potatoes and onions, stir to coat
  • Step 3
    Cook over medium heat stirring occasionally until golden brown
  • Step 4
    Season with salt and pepper, add sage and 1/2 the vinegar and mix
  • Step 5
    Place in an oven proof dish, cover and bake for 20 minutes
  • Step 6
    Add remaining vinegar and bake uncovered for 20-30 minutes or until potatoes are tender
