8 medium
potatoes (about 2 1/2# total) peeled & cut into 1" cubes
1 c
evaporated milk
1/2 c
sour cream, lite
1 tsp
salt
1/2 tsp
black pepper
2 c
shredded cheddar cheese (divided)
6 slice
cooked & crumbled bacon (divided)
sliced green onion (optional)

How to Make Baked Potato Casserole

Step-by-Step

  • 1Place potatoes in a lg. saucepan. Cover with water and bring to a boil. Cook over medium-high heat for 15 to 20 min. or until tender, drain.
  • 2Preheat oven to 350 degrees. Grease a 3 qt. casserole dish.
  • 3Return potatoes to saucepan, add evaporated milk, sour cream, salt & pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups of cheese and half of the bacon. Spoon mixture into prepared casserole dish.
  • 4Bake for 25 to 30 min. or until heated though. Top with remaining cheese, bacon and green onion. Bake for additional 3 miin. or until cheese is melted.
