Ingredients
- 8 medium potatoes (about 2 1/2# total) peeled & cut into 1" cubes
- 1 cup evaporated milk
- 1/2 cup sour cream, lite
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese (divided)
- 6 slices cooked & crumbled bacon (divided)
- - sliced green onion (optional)
How To Make baked potato casserole

Step 1Place potatoes in a lg. saucepan. Cover with water and bring to a boil. Cook over medium-high heat for 15 to 20 min. or until tender, drain.

Step 2Preheat oven to 350 degrees. Grease a 3 qt. casserole dish.

Step 3Return potatoes to saucepan, add evaporated milk, sour cream, salt & pepper. Beat with hand-held mixer until smooth. Stir in 1 1/2 cups of cheese and half of the bacon. Spoon mixture into prepared casserole dish.

Step 4Bake for 25 to 30 min. or until heated though. Top with remaining cheese, bacon and green onion. Bake for additional 3 miin. or until cheese is melted.
