I was in the store shopping for a meal I was going to make for a friend. When I said I was going to make fried baby reds someone suggested putting Prosciutto in it. Thus we discovered the best darn potato dish! As my son-in-law says everything is better with Prosciutto!

Ingredients

baby red potatoes
6 oz
diced prosciutto
2 Tbsp
olive oil
salt and pepper

TOPPINGS

chedder cheese, grated
1 bunch
green onions, sliced

How to Make Baby Red Potatoes and Prosciutto

Step-by-Step

  • 1wash and cube baby reds, you want them to be about 1" cubes. Boil potatoes until fork tender. Chill. This can be done the night before if you like.
  • 2In frying pan heat olive oil and add potatoes and prosciutto. Salt and pepper to taste. Pan fry until lightly browned.
  • 3Serve with toppings as an optional addition. I have also had them with country gravy on top and they were fantastic!! Simple to make but they taste so good!
