Baby Red Potatoes and Prosciutto

Susan Bartley

I was in the store shopping for a meal I was going to make for a friend. When I said I was going to make fried baby reds someone suggested putting Prosciutto in it. Thus we discovered the best darn potato dish! As my son-in-law says everything is better with Prosciutto!

  • 6 oz
    diced prosciutto
  • 2 Tbsp
    olive oil
  • ·
    salt and pepper

  • ·
    chedder cheese, grated

How to Make Baby Red Potatoes and Prosciutto

  1. wash and cube baby reds, you want them to be about 1" cubes. Boil potatoes until fork tender. Chill. This can be done the night before if you like.
  2. In frying pan heat olive oil and add potatoes and prosciutto. Salt and pepper to taste. Pan fry until lightly browned.
  3. Serve with toppings as an optional addition. I have also had them with country gravy on top and they were fantastic!! Simple to make but they taste so good!
