baby red potatoes and prosciutto

I was in the store shopping for a meal I was going to make for a friend. When I said I was going to make fried baby reds someone suggested putting Prosciutto in it. Thus we discovered the best darn potato dish! As my son-in-law says everything is better with Prosciutto!

Ingredients

  • 12 - baby red potatoes
  • 6 ounces diced prosciutto
  • 2 tablespoons olive oil
  • - salt and pepper
  • TOPPINGS
  • - chedder cheese, grated
  • 1 bunch green onions, sliced

How To Make baby red potatoes and prosciutto

  • Step 1
    wash and cube baby reds, you want them to be about 1" cubes. Boil potatoes until fork tender. Chill. This can be done the night before if you like.
  • Step 2
    In frying pan heat olive oil and add potatoes and prosciutto. Salt and pepper to taste. Pan fry until lightly browned.
  • Step 3
    Serve with toppings as an optional addition. I have also had them with country gravy on top and they were fantastic!! Simple to make but they taste so good!
