baby red potatoes and prosciutto
I was in the store shopping for a meal I was going to make for a friend. When I said I was going to make fried baby reds someone suggested putting Prosciutto in it. Thus we discovered the best darn potato dish! As my son-in-law says everything is better with Prosciutto!

Ingredients
- 12 - baby red potatoes
- 6 ounces diced prosciutto
- 2 tablespoons olive oil
- - salt and pepper
- TOPPINGS
- - chedder cheese, grated
- 1 bunch green onions, sliced
How To Make baby red potatoes and prosciutto

Step 1wash and cube baby reds, you want them to be about 1" cubes. Boil potatoes until fork tender. Chill. This can be done the night before if you like.

Step 2In frying pan heat olive oil and add potatoes and prosciutto. Salt and pepper to taste. Pan fry until lightly browned.

Step 3Serve with toppings as an optional addition. I have also had them with country gravy on top and they were fantastic!! Simple to make but they taste so good!
